I love this salad, It makes a great side dish or for me it's a meal in itself! There's nothing like fresh organically grown heirloom varieties of corn!
Ingredients 4 fresh corn on the cob 2 large avocados, diced 1/2 red onion, very finely diced 6 medium ripe tomatoes, deseeded and diced 1 medium zucchini, diced Zesty Dill Dressing
How to make: Chop the corn into halves and hold firmly down on the chopping board whilst cutting downwards to remove the kernels. Place all of the ingredinets into a bowl except the avocado and stir through the dressing until well combined. Gently stir through the avocado last and serve.
